Turkish Red Lentil Soup with Mint


The Turkey Red Lentil Soup is a simple, flavorful and nutritious recipe. The soup is low in carbs, fat, and sugar making it a favorable meal for weight loss.


1. In a large pot, heat the olive oil over high heat. Add the onion in the heated oil then cook and stir for about 2 minutes until it starts to soften. Mix the onion with garlic and cook an additional 2 minutes. To the onion mixture, add the diced tomatoes; continue cooking and stirring another 10 minutes.

2. Pour in the red lentils, rice, paprika, mint, chicken stock, bulgur, tomato paste, and cayenne pepper to the tomato mixture. Season the mixture with black pepper and salt. Boil the soup, turn to medium-low heat, and let the rice and lentils cook at a simmer for about 30 minutes.

3. Blend the soup and leave it on to puree. Don’t fill the blender with soup, half full is enough. Smoothen the puree then pour into a serving dish. You can also use a stick blender and reduce the soup to paste in a cooking pot.
